A Culinary Journey from Vietnam to Australia?

At the heart of AIL Bakehouse is the story of Mr. T and Mrs. Vu Dang, our founder, whose passion for baking is deeply rooted with their childhood in Vietnam. Growing up in the bustling streets of Saigon, they were surrounded by the enticing aromas of freshly baked bánh mì and the sweet scent of traditional pastries. His family, a group of skilled home baker, instilled in him a love for creating joy through food.

As a young boy, Mr. T would wake up early to help his mother prepare treats for the family. The precision required in measuring ingredients, the patience needed for proofing dough, and the excitement of watching cakes rise in the oven – all these experiences shaped Mr. T’s culinary journey.

Years later, when Mr. T moved to Australia, he found himself missing the familiar tastes of home. Inspired by the multicultural food scene in his new country and driven by a desire to share his heritage, he began experimenting with fusion recipes. He combined traditional Vietnamese flavors with classic Australian baking techniques, creating unique treats that resonated with both cultures.

This passion project soon grew into a vision for a bakery that could offer the best of both worlds. In April 2023, that vision became a reality with the opening of the first AIL Bakehouse located in Sydney Street Market. The bakery quickly became a local favorite in Mackay City, leading to the opening of our second branch in February 2024 in Caneland Shopping Centre. As we prepare for our third location in November 2024, we remain committed to the values and flavors that started our journey.
